Shrimp and mango, mango and shrimp
The other day I was at Winners and while at the cash register, I saw this book "Everyday Thai, A Collection of over 100 Essential Recipes." Had to get it! Best part is, it was only $3.99! There's a Shrimp and Papaya recipe in there that looked very delish... Only problem is, I hate papaya. So I remixed it and made it a Shrimp and Mango Salad. This is ridiculously easy to make!
Here are your ingredients: Shrimp, mangoes, chili peppers, red peppers, scallions (green onions), and whichever green leafs you wanna go for. You will also need fish juice, olive oil, lemon and brown sugar. Slice your mangoes in thin-ish slices and put them aside with your shrimp. Cut up the scallions and the peppers as small as you can. put in 1 teaspoon of fish juice, 1 tablespoon of olive oil, juice of 1 lemon, and 1 teaspoon of brown sugar. I then added that dressing to my bowl of shrimp and mangoes. Mix it well, and put the whole thing over your bed of greens. Et voila! It literally takes less than 5 minutes and it takes amazing!
