Happy Saturday! I quickly wanted to share this easy hummus recipe. We are a mostly plant based household, so I love this for veggie dips, pita chips or even on avocado toast. It takes about 10 minutes. If you're roasting your own pepper, maybe another 10 minutes (I slice them, put it on broil low, and then high and it's done)!
So you'll need:
- 1 cup of chickpeas
- 1 roasted bell pepper
- 1 1/2 tsp of turmeric
- 1 heaping tbsp of tahini
- 1-2 cloves of garlic
- 2 tbs of water
- 1 tbs of lemon juice
Add to taste pinches of:
- Salt
- Cumin
- Smoked paprika
- Roasted red pepper flakes
Add everything in a food processor except the water. Once it's all mixed a little, start adding the water to thin. Put in a serving bowl and garnish as you like. I cut up a piece of the roasted red pepper, extra roasted red pepper flakes and a tiny bit of chopped parsley. And that's that!
